Salade de carottes
Prep time: 15 min -
- 1 pound of carrots
- 1/3 cup olive oil
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 smallish shallot finely chopped (or substitute 2 tablespoons finely chopped red onion)
Peel the carrots and use a food processor to shred them.
In a medium sized bowl, whisk together the olive oil, lemon juice, salt and pepper. Stir in the shallots and then add the carrots. Mix until the carrots are completely dressed.
Cover and let this salad sit for an hour in the refrigerator to allow the flavors to blend.
Makes four to six servings.
Salade de concombres à la crème fraîche
Creamy Cucumber Salad
Prep time: 20 min
- 2 cucumbers
- 1 cup crème fraîche (or substitute Greek style yogurt)
- 1 tablespoon lemon juice
- 2 pinches of salt
- 1 pinch of pepper
1. Slice the cucumbers in 1/8 inch slices (a food processor is great for this). If you are using garden cucumbers, you will want to peel them and remove the seeds before slicing.
2. Place the cucumber slices in a bowl and toss with the lemon juice, crème fraîche or yogurt, and salt and pepper. Serve cold.
Minted Zucchini salad
Ingredients:
· 2 plum tomatoes, chopped
· 3 medium zucchini, chopped
· 1 ½ tablespoons lemon juice
· 3 tablespoons olive oil
· 1/3 cup packed finely chopped mint leaves
· ¼ cup finely chopped fresh parsley
Preparation:
Layer the tomatoes on 4 salad plates. Toss remaining ingredients together and serve over the tomatoes.
Makes 12 servings.
Watermelon and Raspaberry Salad
Ingredients:
· 1/4 cup chopped mint leaves
· 1 tablespoon honey
· 2 teaspoons lime juice
· 3 1/2 cups cubed watermelon
· 3 1/2 cups fresh red or black raspberries
Preparation:
In a small bowl, whisk together the chopped mint, honey, and lime juice. Allow the mint-honey dressing to chill in the refrigerator for 15 minutes.
Gently toss the prepared dressing with the watermelon and raspberries. Serve the salad immediately or store it in the refrigerator for up to 2 days.
This watermelon raspberry salad recipe makes 6 to 8 servings.
